Soft, chewy 4th of July Monster Cookies packed with peanut butter, oats, chocolate chips and festive M&M candies.

3/4 cup unsalted butter

1 cup light brown sugar

1/4 cup granulated sugar

1/2 cup smooth peanut butter

1 large egg plus 1 egg yolk

1 teaspoon vanilla

2 1/4 cups all-purpose flour

3/4 cup quick oats

1 teaspoon baking soda

1/2 teaspoon kosher salt

3/4 to 1 cup semi-sweet chocolate chips

1/2 cup white chocolate chips

1 cup M&M candies

1. Preheat oven to 350°F and line baking sheets with parchment paper.

2. Cream butter, sugars and peanut butter until fluffy.

3. Add egg and egg yolk and mix.

4. Add vanilla.

5. Whisk flour, oats, baking soda and salt separately.

6. Combine dry ingredients with wet ingredients gently.

7. Fold in chocolates and M&M candies.

8. Scoop dough and bake 9 to 11 minutes.

9. Cool before serving.

Do not over mix.

Remove cookies while centers are slightly soft.

Tap pan to create chewy texture.
