Ingredients
Apple filling
5 Apples, cored and peeled
⅔ cup Brown sugar
1 teaspoon Cinnamon
½ teaspoon Nutmeg
2 tablespoon Lemon juice
4 tablespoon Water
½ cup Butter, unsalted
4 teaspoon Cornstarch, slurry
Crust
3 cups Graham cracker crumbs
5.2 oz Butter, melted
1 tablespoon Granulated sugar
½ teaspoon Cinnamon
Cheesecake filling
28 oz Cream cheese, room temp
2 teaspoon Vanilla extract
1 ¼ cups Granulated sugar
1 cup Sour cream
4 Eggs
2 tablespoon Cornstarch
Crumble topping
¾ cup All-purpose flour
½ cup Rolled oats
1 teaspoon Cinnamon
⅓ teaspoon Kosher salt
3.1 oz Butter, melted
⅓ cup Brown sugar
Instructions
1. Make the apple filling: simmer apples with sugar, spices, butter, and slurry until thick, then cool.
2. Prepare crust: combine crumbs, sugar, cinnamon, butter; press into pan; bake 8 minutes; cool.
3. Mix filling: beat cream cheese, sugar, vanilla; add sour cream; blend in eggs; fold in cornstarch.
4. Make crumble: stir flour, oats, sugar, cinnamon, salt; add melted butter; form clusters.
5. Assemble: half batter, apple layer, rest of batter, crumble on top.
6. Bake at 150 °C for 60–75 minutes until edges set and center jiggles.
7. Cool in oven with door cracked 45 minutes; chill 5 hours.
8. Unmold, slice, and serve with caramel or whipped cream.
Notes
Use tart apples for balance.
Room-temperature dairy prevents lumps.
