Description

Baked Feta Eggs is a Mediterranean breakfast dish made with roasted tomatoes, spinach, creamy feta, and perfectly baked eggs.


Ingredients

Scale

2 cups cherry or grape tomatoes

1 red bell pepper, diced

½ small red onion, diced

3 cloves minced garlic

8 ounces feta cheese

4 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon sea salt

½ teaspoon dried thyme

½ teaspoon ground black pepper

½ teaspoon red pepper flakes

1 cup chopped baby spinach

4 large eggs

Optional: chopped fresh basil or fresh chives


Instructions

1. Preheat oven to 400 degrees F.

2. Divide vegetables and feta into ramekins or place in one baking dish.

3. Drizzle olive oil over ingredients.

4. Mix spices and sprinkle evenly over dish.

5. Bake for 25 minutes.

6. Stir in spinach until wilted.

7. Create wells and crack eggs into each well.

8. Bake an additional 10 minutes.

9. Top with fresh herbs and serve with bread.

Notes

Use block feta in brine for best texture.

Adjust baking time for desired yolk consistency.

Serve immediately for best flavor.
