A BBQ Chicken Sweet Potato Bowl made with roasted sweet potatoes, juicy BBQ chicken, and fresh toppings. Perfect for healthy meal prep or a high-protein dinner.
Ingredients
1 pound boneless skinless chicken breasts
2 medium sweet potatoes peeled and diced
2 tablespoons olive oil divided
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon paprika
½ teaspoon garlic powder
½ cup BBQ sauce
1 avocado diced (optional)
½ cup canned corn drained (optional)
½ cup black beans rinsed and drained (optional)
¼ cup diced red onion (optional)
2 tablespoons chopped fresh cilantro (optional)
¼ cup shredded cheddar or Monterey Jack (optional)
2 tablespoons sliced green onions (optional)
Instructions
1. Preheat oven to 400°F and toss sweet potatoes with olive oil and seasonings.
2. Roast sweet potatoes for 25 to 30 minutes, flipping halfway.
3. Season chicken and cook in skillet 6 to 7 minutes per side until 165°F.
4. Rest chicken, slice or shred, and toss with warm BBQ sauce.
5. Assemble bowls with sweet potatoes, BBQ chicken, and desired toppings.
Notes
Store components separately for meal prep.
Reheat chicken and sweet potatoes before assembling.
Add extra BBQ sauce before serving if desired.
