Description
Beef enchiladas made with seasoned ground beef, warm tortillas, rich red enchilada sauce, and melted cheese for an easy Mexican dinner.
Ingredients
1 pound lean ground beef
1 cup chunky salsa
1 (10-ounce) can red enchilada sauce
8 (8-inch) tortillas
1 (8-ounce) package shredded Mexican cheese blend
Instructions
1. Preheat the oven to 350°F and lightly spray a 9×13-inch baking dish.
2. In a large skillet, brown the ground beef over medium-high heat and drain.
3. Stir in the salsa and heat through.
4. Pour half the enchilada sauce into the baking dish.
5. Warm the tortillas.
6. Add 1/4 cup beef mixture and 1 tablespoon cheese to each tortilla and roll.
7. Place rolled tortillas seam-side down and cover with remaining sauce.
8. Sprinkle with remaining cheese.
9. Cover with foil and bake 30 to 35 minutes.
Notes
Use flour tortillas for easier rolling.
Add jalapeños for more heat.
Top with cilantro or crema after baking.
