Ingredients
3 pounds boneless skinless chicken thighs or chicken breasts
2 teaspoons olive oil
4–5 tablespoons water (optional)
1 can chipotle peppers in adobo sauce (7 oz)
4 tablespoons fresh lime juice
4 tablespoons fresh orange juice
1/2 cup fresh cilantro
6 garlic cloves
1 medium onion, quartered
1 teaspoon cumin
1 tablespoon dried oregano
1 teaspoon ground coriander
1 teaspoon smoked paprika
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Add all marinade ingredients to a blender and blend until smooth.
2. Coat the chicken thoroughly with the marinade.
3. Marinate in the refrigerator for at least 30 minutes or overnight.
4. Preheat the Blackstone griddle to 350°F-400°F and coat with olive oil.
5. Cook the chicken for 15-30 minutes, flipping occasionally, until it reaches 165°F internal temperature.
6. For pan searing, cook in a skillet for 5 minutes per side.
7. For air frying, cook at 400°F for 14-15 minutes, flipping halfway.
8. Rest the chicken before slicing and serve hot.
Notes
Marinate overnight for deeper flavor.
Use fresh citrus juices for the best taste.
Let the chicken rest before slicing to retain juices.
Serve with fried rice, noodles, or grilled vegetables.
