Description
Blueberry Peach Crumble is a warm summer berry dessert made with juicy peaches, fresh blueberries, and a sweet crumble topping.
Ingredients
2 cups blueberries
2 1/2 cups peeled and sliced peaches (5–6 peaches)
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
1/4 teaspoon vanilla extract
1/2 cup granulated sugar
1/4 cup all-purpose flour
1/2 cup all-purpose flour
1/2 cup old-fashioned oats
1/3 cup brown sugar
1/4 cup granulated sugar
1/2 teaspoon salt
1 teaspoon ground cinnamon
6 tablespoons cold butter, diced
Instructions
1. Preheat oven to 350 degrees F.
2. Combine blueberries, peaches, lemon juice, zest, vanilla, sugar, and flour. Toss gently.
3. In another bowl whisk flour, oats, sugars, salt, and cinnamon.
4. Mix in cold butter with fingers until large crumbles form.
5. Place fruit in baking dish, top with crumble, and bake 40-45 minutes until golden and bubbly.
Notes
Serve warm or at room temperature.
Delicious with vanilla ice cream.
Store leftovers in refrigerator up to 4 days.
