Description

Hearty Cabbage Roll Soup made with ground beef, cabbage, rice, and tomato broth – a comforting one-pot meal perfect for busy nights.


Ingredients

Scale

2 tsp. vegetable oil

1 lb. lean ground beef

salt and pepper

1 medium yellow onion, diced finely

2 cloves garlic, minced

4 cups chopped green cabbage

2 medium carrots, quartered and sliced

4 cups low-sodium beef broth

3 (8 oz.) cans tomato sauce

1/2 cup white rice, uncooked

1 bay leaf

3 tbsp. light brown sugar

2 tbsp. fresh chopped parsley


Instructions

1. Heat oil over medium-high heat in a Dutch oven.

2. Add ground beef, season with salt and pepper, and cook until browned.

3. Add diced onion and minced garlic; cook for 2-3 minutes.

4. Stir in chopped cabbage, carrots, tomato sauce, beef broth, white rice, bay leaf, and brown sugar.

5. Bring to a simmer; cook 25 minutes or until rice is tender.

6. Remove bay leaf; garnish with fresh parsley and serve hot.

Notes

To freeze: Cool completely, store in airtight containers for up to 3 months.

Add a splash of broth when reheating to refresh texture.
