Description

A warm, creamy Caprese Dip made with roasted cherry tomatoes, basil, and three cheeses — perfect for parties or a cozy appetizer.


Ingredients

Scale

2 cups cherry tomatoes

1 Tablespoon olive oil

2 Tablespoons basil pesto

5 cloves garlic, minced

Kosher salt and black pepper to taste

1 cup sour cream

1/2 cup fresh chopped basil

8 ounces low-moisture mozzarella cheese, cut into chunks

8 ounces shredded provolone cheese

¼ cup freshly grated parmesan cheese

Crusty bread, crackers, or tortilla chips for serving


Instructions

1. Preheat oven to 400°F and position rack in the middle.

2. Add 1 cup of whole cherry tomatoes to a 2-quart baking dish or skillet. Drizzle with olive oil, top with pesto, garlic, salt, and pepper. Bake for 15 minutes.

3. While roasting, stir sour cream with basil, mozzarella, provolone, and parmesan.

4. Add cheese mixture to roasted tomatoes and toss. Top with remaining halved tomatoes.

5. Bake for 20 minutes until golden and bubbly. Top with fresh basil before serving.

Notes

Best served immediately while hot. You can make ahead and reheat at 350°F for 10 minutes. Great with bread, chips, or veggies.
