Cheats opera cake with almond flour, strong coffee, and whipped cream for a quick yet rich dessert.

Ingredients

Scale

1 cup almond flour

1/2 cup granulated sugar

3 large eggs

1/2 cup unsalted butter (softened)

1/2 cup brewed strong coffee (espresso preferred)

1 cup heavy cream (for frosting)

1/4 cup powdered sugar (for frosting)

Instructions

1. Preheat the oven to 350°F (175°C). Grease two round baking pans and line them with parchment paper.

2. In a mixing bowl, combine almond flour and granulated sugar until well blended.

3. In another bowl, beat the eggs until frothy, then mix in the melted butter and brewed coffee.

4. Gradually combine the wet ingredients into the dry ingredients while whisking until smooth.

5. Divide the batter evenly between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.

6. While the cakes cool, whip heavy cream with powdered sugar until stiff peaks form.

7. Once cooled, layer the cakes with whipped frosting in between and on top.

Notes

Use espresso for deeper flavor.
