These cheesy ground beef enchiladas are an easy family dinner ready in under 40 minutes—perfect for busy weeknights.
Ingredients
1 lb lean ground beef
8 flour or corn tortillas
2 cups enchilada sauce
1 cup shredded cheddar or Monterey Jack cheese
1 medium onion, diced
2 cloves garlic, minced
1 tsp cumin
1 tsp chili powder
Sour cream for topping
Instructions
1. Preheat oven to 375°F (190°C).
2. Brown ground beef with onions until translucent (5-7 min).
3. Add garlic, cumin, chili powder; cook 1 more min.
4. Spoon filling into tortillas, roll, place seam-side down in dish.
5. Pour enchilada sauce and sprinkle cheese.
6. Bake 20–25 min until bubbly and golden.
Notes
