Description
Cheesy Taco Potatoes combine crispy roasted potatoes, seasoned beef, and melted cheddar for a bold and satisfying dinner.
Ingredients
1 ½ lbs russet potatoes scrubbed and cubed
2 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1 teaspoon chili powder
½ teaspoon ground cumin
1 teaspoon salt
½ teaspoon black pepper
1 lb ground beef
1 packet taco seasoning
⅓ cup water
1 ½ cups shredded cheddar cheese
½ cup sour cream
¼ cup chopped green onions
Instructions
1. Preheat oven to 425°F and season cubed potatoes with oil and spices.
2. Roast potatoes for 25–30 minutes flipping halfway.
3. Brown ground beef and stir in taco seasoning with water. Simmer 5 minutes.
4. Transfer roasted potatoes to skillet, top with beef and cheese.
5. Bake 5 minutes until cheese melts. Garnish and serve.
Notes
Flip potatoes halfway for even crispiness.
Drain meat well to prevent soggy texture.
Add toppings right before serving.
