4 cups zucchini diced

1 cup mayonnaise

1 cup shredded cheddar cheese

2 eggs beaten

1 tsp pepper

1 tsp garlic powder

1/4 cup panko breadcrumbs

1 tbsp butter melted

1. Boil zucchini for 3 minutes then drain

2. Mix zucchini with mayonnaise cheese eggs and seasoning

3. Transfer to greased baking dish

4. Mix breadcrumbs with butter and sprinkle on top

5. Bake at 350F for 35 minutes

Drain zucchini well to avoid excess moisture
