Description

Soft and buttery Cherry Cake made with fresh cherries. A perfect summer cake recipe with a tender crumb and warm flavor.


Ingredients

1 ½ cups all-purpose flour

1 teaspoon baking powder

¼ teaspoon salt

½ cup unsalted butter, softened

¾ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

½ teaspoon almond extract

½ cup sour cream or plain Greek yogurt

2 cups fresh cherries, pitted and halved

1 tablespoon all-purpose flour, for tossing cherries

1 tablespoon powdered sugar, for dusting


Instructions

1. Preheat oven to 350°F. Grease a 9-inch round cake pan and line with parchment paper.

2. Whisk together flour, baking powder, and salt.

3. Beat butter and sugar until light and fluffy.

4. Add eggs one at a time. Stir in vanilla and almond extract.

5. Mix in sour cream until smooth.

6. Gradually combine dry ingredients with wet ingredients.

7. Toss cherries with flour and fold most into batter.

8. Spread batter into pan. Top with remaining cherries.

9. Bake 40–45 minutes until golden and a toothpick comes out clean.

10. Cool, dust with powdered sugar, and serve.

Notes

Do not overmix the batter.

Use firm fresh cherries for best texture.

Store in airtight container up to 2 days.
