Description
Juicy and crispy Chicken Carnitas made in the slow cooker with citrus, garlic, and warm spices. Perfect for tacos.
Ingredients
1 1/2 pounds boneless and skinless chicken breasts or thighs
3/4 cup orange juice
1/4 cup lime juice
4 cloves garlic, chopped
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon oregano
1/2 teaspoon salt
1/2 teaspoon pepper
12 small corn tortillas
1/2 red onion, diced
1/2 cup cilantro, torn
salsa to taste
2 limes, cut into wedges
Instructions
1. Place the chicken in the slow cooker with orange juice, lime juice, garlic, chili powder, cumin, oregano, salt and pepper. Cook on low 6-8 hours until tender.
2. Shred the chicken and mix in 1/4 cup of the juices.
3. Spread on a baking sheet and broil 5 minutes until crispy.
4. Mix in more juices, broil again 5 minutes, and repeat once more.
5. Assemble tacos with chicken carnitas, onion, cilantro, salsa, and lime wedges.
Notes
Use chicken thighs for extra juiciness.
Broiling creates authentic crispy edges.
Store leftovers in an airtight container up to 4 days.
