A quick and healthy Chicken Stir-Fry ready in just 30 minutes! Tender chicken, crisp veggies, and a savory Asian-inspired sauce make this the perfect weeknight dinner.
Ingredients
¼ cup chicken broth
¼ cup tamari soy sauce (or coconut aminos)
1 tablespoon dry sherry (optional)
1 tablespoon honey
1 teaspoon sesame oil
1 teaspoon rice vinegar (or apple cider vinegar)
1 tablespoon cornstarch (or arrowroot powder)
2 tablespoons avocado oil
1 pound boneless skinless chicken breast, cut into 1-inch pieces
Salt and pepper, to taste
1 red bell pepper, chopped
1 small carrot, thinly sliced
2 cups broccoli florets
1 small yellow onion, chopped
1 tablespoon grated fresh ginger
4 garlic cloves, minced
1 tablespoon sesame seeds
1 green onion, sliced
Instructions
1. In a small bowl, whisk together the chicken broth, soy sauce, dry sherry, honey, sesame oil, rice vinegar, and arrowroot powder. Set aside.
2. Heat one tablespoon of oil in a large skillet over medium-high heat. Add chicken in a flat layer, season with salt and pepper, and cook until lightly browned, 4–5 minutes. Remove to a plate.
3. Add the remaining oil with bell pepper, onion, carrot, and broccoli. Stir-fry for 3–4 minutes until tender-crisp.
4. Return chicken to the pan. Add ginger and garlic, stir for 30 seconds.
5. Pour in sauce and stir-fry 1–2 minutes until thickened.
6. Garnish with sesame seeds and sliced green onions before serving.
Notes
Serve over rice or noodles for a filling meal. Store leftovers in the fridge up to 3 days.
