Ingredients
Chocolate Cookies
1 cup all-purpose flour, spooned and leveled
2/3 cup cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
10 tablespoons unsalted butter, softened
3/4 cup brown sugar, packed
1/4 cup white sugar
1 large egg, room temperature
1 teaspoon vanilla
3/4 cup chocolate chips, semi-sweet or dark
Raspberry Cream Cheese Frosting
1 cup raspberries, fresh or frozen
6 tablespoons unsalted butter, softened
1 oz full-fat cream cheese
1 1/2–2 cups powdered sugar
1/4 teaspoon salt
Instructions
1. In a medium bowl whisk flour, cocoa powder, baking soda, and salt.
2. Beat butter, brown sugar, and white sugar until fluffy.
3. Add egg and vanilla; mix well.
4. Add dry ingredients gradually; stir in chocolate chips.
5. Chill dough 3 hours.
6. Bake 8–10 minutes at 350°F.
7. Make raspberry puree by reducing it on low heat.
8. Beat butter and cream cheese, add sugar and raspberry puree.
9. Spread frosting between cookies to form sandwiches.
Notes
Yields 14 sandwich cookies.
Chill dough overnight for extra fudginess.
Store refrigerated for best texture.
