Classic potato candy roll made with creamy peanut butter and vanilla for a sweet, nostalgic holiday treat.
Ingredients

1 medium potato
2 tablespoons real butter
Pinch of salt
1 teaspoon pure vanilla
2 pounds powdered sugar, more for rolling out candy
1 jar creamy peanut butter, 16 ounces (may not use all)
Instructions
1. Peel and slice the potato. Cook until tender, then drain.
2. Mash with butter, vanilla, and salt until smooth.
3. Add powdered sugar gradually until thick and pliable.
4. Roll out mixture to 1/4 inch thickness on sugared paper.
5. Spread peanut butter evenly, leaving edges clean.
6. Roll into log, chill, slice, and serve.
Notes
Store in airtight containers.
Makes a great homemade gift or addition to a candy platter.
