Description

A refreshing Citrus Salad with oranges, grapefruit, and a tangy pomegranate vinaigrette — the perfect blend of sweet, tart, and savory.

Ingredients

Scale

2 large oranges

1 large pink grapefruit

1 medium blood orange

Kosher salt

3 tablespoons extra virgin olive oil

3 tablespoons pomegranate juice

1 tablespoon red wine vinegar

1/2 teaspoon honey

Splash lemon juice, to taste

Fresh mint leaves, for garnish

Pomegranate arils, for garnish

Instructions

1. Peel citrus, removing pith, and slice into wheels.

2. Layer fruit on a serving dish and sprinkle lightly with salt.

3. Whisk olive oil, pomegranate juice, vinegar, honey, and lemon juice.

4. Taste, adjust seasoning, and drizzle vinaigrette over fruit.

5. Garnish with mint and pomegranate arils before serving.

Notes

For best flavor, use a mix of sweet and tart citrus. Chill before serving for extra freshness.
