Description

Classic Apricot Jam is a traditional three ingredient jam made without commercial pectin. This homemade apricot preserve uses ripe apricots, sugar, and lemon juice for a bright, rich flavor and perfect natural set.


Ingredients

Scale

2.5 kg fresh apricots, prepared weight

1/4 cup water

1/4 cup freshly squeezed lemon juice

1.8 kg granulated sugar


Instructions

1. Preheat oven to 130°C and sterilise jars and lids for 20 minutes.

2. Wash, dry, halve apricots and remove stones.

3. Place apricots, lemon juice, and water in a large saucepan and simmer 10-15 minutes until tender.

4. Add sugar and stir without boiling until dissolved.

5. Increase heat and boil uncovered about 20 minutes, stirring frequently.

6. Test setting point using chilled plate or thermometer at 104°C.

7. Let jam stand 10 minutes, then ladle into hot sterilised jars.

8. Seal immediately and cool completely before storing.

Notes

Always use clean, dry spoons when serving.

Jam may take up to 48 hours to fully set.

Store unopened jars in a cool, dark place for up to 1 year.
