Description

Cookie-Crusted Peach Cobbler is a warm easy peach dessert featuring juicy peaches topped with a buttery sugar cookie crust and cinnamon.


Ingredients

8 fresh peaches, peeled, pitted, and sliced

1/2 cup butter, cut into pieces

1/2 cup brown sugar

2 cups all-purpose flour

2 cups white sugar

2 teaspoons baking powder

1 teaspoon salt

1 cup vegetable oil

2 eggs, lightly beaten

1 teaspoon ground cinnamon

Cooking spray


Instructions

1. Preheat oven to 350°F (175°C) and spray a 9×13-inch baking pan with cooking spray.

2. Arrange sliced peaches in the pan.

3. Scatter butter over peaches and sprinkle brown sugar evenly.

4. Mix flour, white sugar, baking powder, and salt in a bowl.

5. Stir oil and beaten eggs together, then combine with dry ingredients.

6. Spoon mixture over peaches and sprinkle cinnamon on top.

7. Bake for about 45 minutes until crust is lightly browned.

8. Let cool slightly before serving.

Notes
