Creamy Corn Soup made with butter, sweet corn, potatoes, and lime for a smooth and comforting soup recipe.
Ingredients
3 tablespoons butter
1 large yellow potato, peeled and diced
1/2 cup chopped onion
3 cloves garlic, minced
3 cups low-sodium chicken broth
5 cups corn kernels, divided
1 cup heavy cream
1–2 tablespoons fresh lime juice
Salt and pepper to taste
Chopped chives or cilantro (optional)
Lime wedges (optional)
Instructions
1. Heat pot and melt butter.
2. Add potatoes, onion, and garlic. Cook until softened.
3. Add broth and 4 cups corn. Bring to boil, then simmer.
4. Cook until vegetables are tender.
5. Blend until smooth.
6. Stir in cream, remaining corn, and lime juice.
7. Season and simmer 5 minutes. Serve warm.
Notes
Use vegetable broth for vegetarian version.
Fresh or frozen corn both work well.
Adjust thickness with broth if needed.
