Description

Crockpot Chicken Fajitas made with tender slow cooker chicken, bell peppers, salsa, and bold seasoning for an easy Mexican dinner.


Ingredients

Scale

24 oz salsa

1 red bell pepper (sliced)

1 yellow bell pepper (sliced)

1 green bell pepper (sliced)

1 large yellow onion (thinly sliced)

6 garlic cloves (minced)

2 lb chicken breast (sliced into 1-inch strips)

1 packet fajita seasoning

2 tbsp lime juice

1 teaspoon chili powder


Instructions

1. Slice chicken into strips.

2. Layer half salsa in crockpot.

3. Add half peppers, onion, and garlic.

4. Add chicken and seasonings.

5. Top with remaining salsa and vegetables.

6. Cook on low 6-8 hours or high 3-4 hours.

7. Shred chicken and mix before serving.

Notes

Cook until chicken reaches 165°F.

Store leftovers up to 4 days.
