Description

Custard Peach Pie combines juicy peaches, creamy custard filling, and buttery streusel topping for a comforting homemade dessert.


Ingredients

1 pie crust pastry

1 cup Greek yogurt or labne or sour cream

3 large egg yolks

3/4 cup sugar

5 peaches (about 1 1/2 lbs)

1/4 cup flour

1 tsp vanilla

1/4 cup butter

1/3 cup flour (for streusel)

1/8 cup sugar (for streusel)


Instructions

1. Preheat oven to 425°F (220°C).

2. Roll out pie crust slightly larger than pie plate and place in dish. Trim and crimp edges.

3. Peel and slice peaches 1/2 inch thick. Arrange over crust.

4. Whisk yogurt, egg yolks, flour, sugar, and vanilla until smooth. Pour over peaches.

5. Bake for 30 minutes.

6. Prepare streusel by cutting butter into flour, then mix in sugar.

7. Remove pie, sprinkle streusel on top, and bake 15 more minutes until center sets.

8. Cool on wire rack for 1 hour before serving.

Notes

Drain frozen or canned peaches thoroughly before using.

Use pie crust shield to prevent over-browning.
