Description
DIY Ice Cream Sandwiches made with soft chocolate chip cookies and creamy vanilla ice cream. Perfect fun kids summer dessert and festive sprinkle sandwiches.
Ingredients
2 and 1/4 cups all-purpose flour
1 and 1/2 teaspoons cornstarch
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter
3/4 cup brown sugar
1/2 cup granulated sugar
1 large egg + 1 egg yolk
2 teaspoons vanilla extract
1 and 1/4 cups mini chocolate chips
3 cups vanilla ice cream
1 cup mini chocolate chips, sprinkles, or chopped nuts
Instructions
1. Preheat oven to 350°F and line baking sheets.
2. Whisk flour, cornstarch, baking soda, and salt.
3. Beat butter and sugars until creamy.
4. Add egg, yolk, and vanilla. Mix well.
5. Combine dry ingredients, then stir in chocolate chips.
6. Scoop dough and bake 12–13 minutes.
7. Cool completely.
8. Scoop ice cream onto one cookie and top with another.
9. Roll edges in toppings.
10. Wrap and freeze at least 3 hours.
Notes
Freeze for at least 3 hours before serving.
Store up to 3 months wrapped tightly.
Let sit 3–5 minutes before serving.
