Egyptian Lentils and Rice

Description

Egyptian Lentils and Rice is a comforting vegan crockpot meal packed with warm spices and nourishing ingredients. It’s naturally gluten free and perfect for dinner.


Ingredients

Scale

1 cup green lentils (use red lentils if you want it to cook quicker)

¾ teaspoon salt

4 ½ teaspoons olive oil

1 large onion, chopped

¾ teaspoon cinnamon

1 ¼ tablespoon ground cumin

¼ teaspoon pepper

½ cup jasmine rice (or brown or white rice)

6 cups vegetable stock, water, or chicken stock


Instructions

1. Place the olive oil into the bottom of the slow cooker.

2. Add all of the remaining ingredients, including the stock.

3. Cover and cook on low for 6-7 hours, or on high for 3-4 hours.

4. Stir the mixture while it cooks. If dry, add a little water. If soup-like, remove lid or cook on high briefly.

5. If using red lentils, cook for about 2 hours.

6. Serve with chopped green onions, fresh cilantro, or chopped red onions.

Notes

You can make this recipe on the stovetop by simmering for about 40 minutes.

For a more traditional Koshari flavor, add fried onions on top.

Stores well for up to 4 days in the fridge or 3 months in the freezer.
