Ingredients

Scale

Donuts:

1 1/4 cups Water

1/2 cup Butter (room temperature)

4 1/2 tsp Sugar

1/2 tsp Salt

1/2 tsp Vanilla

1 1/4 cups Flour

4 Eggs

2 Egg whites

Glaze:

2 cups Powdered sugar

1 Tbs Corn syrup

2–3 tsp Hot water

2. Add flour and stir until incorporated and dough coats the pan.

3. Transfer to a mixer and beat until slightly cooled.

4. Add eggs one at a time, then egg whites, mixing until smooth and glossy.

5. Pipe dough onto parchment squares in 3-4″ rings.

6. Fry in 375°F oil for 2-3 minutes per side until golden.

7. Drain on racks and cool.

8. Whisk glaze ingredients until smooth. Dip cooled crullers and let set.
