Description

These Fresh Spring Rolls are filled with crisp veggies, herbs, and noodles, wrapped in soft rice paper, and served with creamy peanut dipping sauce.


Ingredients

Scale

3 large carrots, julienned

1 cucumber, julienned

1 large red pepper, julienned

½ cup cilantro, chopped

1 cup red cabbage, shredded

½ cup green onion, finely sliced

1 avocado

1 cup edamame, shelled

½ cup peanuts, crushed

8 ounces vermicelli noodles (or quinoa/rice)

12 rice paper wrappers

Peanut sauce for dipping


Instructions

1. Cook noodles according to package instructions, rinse with cold water.

2. Prepare vegetables and herbs.

3. Set up a workspace with a damp towel.

4. Dip each rice paper wrapper in warm water for 8–10 seconds.

5. Add noodles, veggies, and peanuts to the center.

6. Fold in sides and roll tightly.

7. Repeat until all ingredients are used.

8. Serve immediately with peanut sauce.

Notes

Keep rolls covered with a damp cloth until serving.

Store leftovers wrapped individually in plastic to prevent drying.
