Soft, buttery funfetti cookies filled with colorful sprinkles—perfect for birthdays, holidays, or any day that needs a little joy.
Ingredients
1/2 C salted butter at room temperature
3/4 C white sugar
1 large egg at room temperature
1 & 1/2 tsp vanilla extract
1 & 1/2 C all purpose flour spooned and leveled
1 & 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cream of tartar
1/4 tsp salt
1/2 C sprinkles plus more for topping
Instructions
1. Preheat oven to 350°F and line baking sheets with parchment paper.
2. Beat butter and sugar until light and fluffy for about 3 minutes.
3. Add egg and vanilla extract; mix well.
4. In a separate bowl, whisk together flour, baking powder, baking soda, cream of tartar, and salt.
5. Add dry ingredients to wet and mix until combined.
6. Fold in sprinkles.
7. Scoop 1.5 tbsp dough balls and roll in extra sprinkles.
8. Place on baking sheet, 2 inches apart.
9. Bake 9 minutes until bottoms are golden.
10. Cool on pan before transferring.
Notes
Use rainbow jimmies for best results—they hold color when baked.
Chill dough for thicker cookies.
Store cookies in an airtight container for up to 5 days.
