Funfetti Sandwich Cookies made with soft sprinkle sugar cookies and rich cream cheese frosting.

Scale

1 ½ c all purpose flour

⅓ c almond flour

¼ tsp baking powder

¼ tsp salt

¾ c unsalted butter

½ c granulated sugar

1 tsp vanilla extract

¼ tsp almond extract

1 large egg

⅓ c sprinkles

½ c unsalted butter (for frosting)

4 oz cream cheese

1 tsp vanilla extract

½ tsp salt

1–2 tbsp milk

2 c powdered sugar

1. Whisk dry ingredients together.

2. Beat butter and sugar until fluffy.

3. Add egg and vanilla, mix well.

4. Add dry ingredients and fold in sprinkles.

5. Roll dough, chill 2 hours.

6. Cut and bake at 350F for 8-12 minutes.

7. Cool completely.

8. Beat butter and cream cheese.

9. Add powdered sugar gradually.

10. Mix in vanilla, salt, and milk.

11. Spread frosting and sandwich cookies.

Chill dough thoroughly.

Use room temperature ingredients.

Store in refrigerator.
