Tender sirloin steak bites simmered in a garlic butter sauce — the ultimate high-protein slow cooker dinner.
Ingredients
3 pounds sirloin steak, cut into bite-sized pieces
2 teaspoons kosher salt
1 teaspoon black pepper
1 Tablespoon vegetable oil (you may need more)
1 small sweet onion, thinly sliced
3 cloves garlic, thinly sliced
1 cup unsalted beef stock
1 ounce packet au jus gravy mix
4 tablespoons unsalted butter, thinly sliced
Instructions
1. Place steak pieces into a large bowl, season with salt and pepper, and toss to combine.
2. Heat a skillet over medium-high heat with vegetable oil and sear steak pieces in batches.
3. Add seared beef to a 6-quart slow cooker with onions and garlic.
4. Pour in beef stock, sprinkle au jus mix over the top, and layer butter slices evenly.
5. Cover and cook on high for 3-4 hours or low for 6-8 hours. Stir once an hour if possible.
6. Serve warm over mashed potatoes, egg noodles, or rice.
Notes
Use lean sirloin for a healthier meal.
To thicken sauce, simmer uncovered for 10 minutes before serving.
Store leftovers for up to 4 days; reheat with a splash of stock.
