Description
A fresh and flavorful Grilled Zucchini Greek Salad packed with Mediterranean ingredients, perfect as a healthy and low-carb summer side dish.
Ingredients
2 zucchinis about 10 inches long
Olive oil for brushing
4 tsp Greek seasoning
1/2 cup Newman’s Own Classic Oil and Vinegar Dressing
2 cups cherry tomatoes halved
6 oz can pitted black olives drained and halved
3/4 cup crumbled feta cheese
1 tbsp dried Greek oregano
Fresh ground black pepper to taste
Instructions
1. Preheat grill to high heat.
2. Trim zucchini and cut lengthwise into fourths or sixths.
3. Brush zucchini with olive oil and sprinkle with Greek seasoning.
4. Grill cut side down for 3 to 4 minutes until grill marks appear.
5. Turn and grill remaining sides until tender crisp.
6. Whisk dressing with dried oregano.
7. Cool slightly and cut zucchini into bite sized pieces.
8. Toss zucchini with one third of the dressing.
9. Add tomatoes and olives and mix with more dressing as desired.
10. Gently fold in feta cheese, season with black pepper, and serve.
Notes
Use a grill pan or broiler if an outdoor grill is unavailable.
Add feta just before serving for best texture.
Salad keeps well refrigerated for up to three days.
