A flavorful and colorful one-pan meal featuring chicken, pineapple, and veggies roasted to perfection for a sweet and savory tropical dinner.
Ingredients
2 lbs chicken breast, diced
1 large bell pepper, chopped
1 medium red onion, chopped
2 cups pineapple chunks (fresh or canned, drained)
2 tbsp soy sauce
2 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
Salt and pepper to taste
Instructions
1. Preheat oven to 400°F (200°C).
2. Whisk together soy sauce, olive oil, garlic powder, paprika, salt, and pepper.
3. Add chicken and marinate for 15–30 minutes.
4. Chop bell pepper, onion, and pineapple.
5. Spread chicken, veggies, and pineapple on a sheet pan.
6. Roast for 25–30 minutes, tossing halfway.
7. Serve hot with rice, quinoa, or on its own.
Notes
Marinate longer for deeper flavor. Store leftovers up to 4 days. Works well for meal prep.
