Description
Sweet and buttery cornbread poppers glazed with warm honey butter, perfect for snacks or appetizers.
Ingredients
1 cup cornmeal
1 cup all-purpose flour
¼ cup sugar
1 tbsp baking powder
½ tsp salt
1 cup buttermilk
¼ cup vegetable oil
1 egg
¼ cup unsalted butter (melted)
2 tbsp honey
¼ tsp salt
Instructions
1. Preheat oven to 400°F (200°C). Grease mini muffin tin.
2. Whisk together cornmeal, flour, sugar, baking powder, and salt.
3. In another bowl, whisk buttermilk, oil, and egg.
4. Combine wet and dry ingredients just until mixed.
5. Spoon batter into muffin tin, ¾ full. Bake 10–12 minutes.
6. Whisk butter, honey, and salt.
7. Brush glaze over warm poppers and serve.
Notes
Serve warm for best flavor.
Store leftovers in airtight container.
Add cheese or jalapeños for variation.
