Juicy Grilled Chicken Kabobs are tender, flavorful, and perfect for summer grilling, meal prep, and gluten-free dinners.
Ingredients
4 boneless skinless chicken breasts
1 Tablespoon melted butter or olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly-cracked black pepper
1/2 teaspoon garlic powder
1/2 teaspoon paprika (smoked paprika preferred)
Fresh lemon wedges (optional)
Instructions
1. Brine the chicken in warm water and kosher salt for 15 minutes or refrigerate up to 6 hours.
2. Rinse and pat the chicken dry.
3. Preheat the grill to medium-high heat and soak wooden skewers for 15 minutes.
4. Cut the chicken into 1-inch pieces and toss with olive oil.
5. Mix salt, pepper, garlic powder, and paprika, then coat the chicken evenly.
6. Thread the seasoned chicken onto skewers.
7. Grill for 10–14 minutes, turning halfway through, until fully cooked.
8. Let the kabobs rest for 5–10 minutes before serving.
9. Serve warm with freshly squeezed lemon juice.
Notes
Do not overcook the chicken to maintain juiciness.
Use a meat thermometer to ensure an internal temperature of 165°F.
Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 months.
