Description

Slow cooker lemon herb chicken and rice creates a bright, comforting one-pot meal with tender chicken, citrus, warm herbs, and soft rice.


Ingredients

2 pounds chicken breasts

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 cup long-grain white rice

4 cups chicken broth

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon lemon zest

2 tablespoons fresh lemon juice

1 teaspoon salt

½ teaspoon black pepper

1 cup frozen peas

2 tablespoons chopped fresh parsley


Instructions

1. Heat the olive oil in a skillet over medium heat.

2. Add the diced onion and sauté until softened.

3. Stir in garlic until fragrant.

4. Transfer mixture to slow cooker.

5. Place chicken on top.

6. Sprinkle thyme, rosemary, lemon zest, salt, and pepper.

7. Add rice around the chicken.

8. Pour broth over everything.

9. Drizzle lemon juice across the top.

10. Cook on low 3–4 hours or high 1.5–2 hours.

11. Remove chicken and set aside.

12. Stir peas into rice.

13. Shred or slice chicken and return it.

14. Season to taste.

15. Top with parsley and serve.

Notes

Make sure rice stays submerged for even cooking.

Sear chicken first for deeper flavor.

Add cream for a richer result.

Swap peas with carrots or green beans.

Adjust cooking time for chicken thighs.
