Description
A creamy and cheesy mac and cheese soup that combines tender pasta with a rich broth of milk, cheddar, and cream cheese for the ultimate comfort meal.
Ingredients
4–5 cups chicken broth or stock.
1¼ cups uncooked elbow macaroni.
2 tablespoons butter.
2 tablespoons all-purpose flour.
2 cloves garlic, minced.
1 cup milk.
4 ounces spreadable cream cheese.
1 cup shredded sharp cheddar cheese.
½ cup shredded Swiss cheese (or more cheddar).
½ teaspoon onion powder.
½ teaspoon dry mustard powder.
¼ teaspoon salt.
¼ teaspoon black pepper.
Instructions
1. In a medium pot, bring the chicken broth to a boil. Add the elbow macaroni and cook until al dente.
2. While the pasta cooks, melt butter in a saucepan and whisk in flour; cook 1 minute.
3. Add minced garlic and cook 30 seconds.
4. Slowly whisk in milk until smooth; add spices and cook until thickened.
5. Stir in cream cheese and shredded cheeses until melted.
6. Combine with cooked pasta and broth, heat through, and season to taste.
Notes
For extra creaminess, stir in a splash of heavy cream before serving. Top with extra cheese or crispy bacon for a decadent finish.
