Description

This Mango Slaw is a refreshing salad made with ripe mangoes, crisp cabbage, and a zesty lime dressing. Perfect as a vegetarian dinner side or fruity coleslaw for easy meals.


Ingredients

2 ripe mangoes, peeled and diced

2 cups green cabbage, finely shredded

1 large carrot, grated

1 red bell pepper, thinly sliced

1/4 cup red onion, thinly sliced

1/4 cup fresh cilantro, chopped

3 tablespoons lime juice

2 tablespoons honey or maple syrup

1 tablespoon sesame oil

Salt and pepper to taste


Instructions

1. Combine diced mangoes, shredded cabbage, grated carrot, red bell pepper, red onion, and cilantro in a large bowl.

2. Whisk together lime juice, honey or maple syrup, sesame oil, salt, and pepper in a small bowl.

3. Pour the dressing over the mango mixture and toss gently to coat evenly.

4. Let the slaw sit for 5-10 minutes to allow flavors to meld.

5. Serve chilled or at room temperature.

6. Customize with avocado, nuts, or chili flakes if desired.

Notes

For extra crunch, serve immediately after mixing.

Store leftovers in an airtight container in the refrigerator for up to 2 days.

Use maple syrup to keep the recipe vegan.
