Description
Creamy garlic salmon cooked in a rich sun-dried tomato sauce. A romantic Tuscan-style dinner ready in just 30 minutes.
Ingredients
4 salmon fillets (6 oz each)
2 tablespoons olive oil
Salt and pepper, to taste
4 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
1 teaspoon red pepper flakes (optional)
2 tablespoons sun-dried tomatoes, chopped
2 tablespoons fresh basil, chopped
Instructions
1. Preheat oven to 375°F (190°C).
2. Heat olive oil in a large oven-safe skillet over medium-high heat. Season salmon fillets with salt and pepper.
3. Sear salmon skin-side up for 3-4 minutes until golden brown, then flip and cook for 2 more minutes. Remove salmon and set aside.
4. In the same skillet, reduce heat to medium, add minced garlic, and sauté for 1 minute until fragrant.
5. Pour in chicken broth and heavy cream, stirring gently to combine.
6. Add Parmesan cheese, red pepper flakes (if using), and sun-dried tomatoes. Stir and let sauce simmer for 3-4 minutes until thickened.
7. Return salmon fillets to the skillet, spoon sauce over them, and transfer the skillet to the oven.
8. Bake for 8-10 minutes or until salmon is cooked through and flakes easily with a fork.
9. Remove from oven, sprinkle with fresh basil, and serve immediately.
Notes
Serve with pasta, mashed potatoes, or roasted vegetables for a complete meal.
