Description

Mexican Cucumber Salad is a creamy, zesty, and refreshing cucumber salad made with lime, cotija cheese, corn, and chili seasoning. Perfect as a summer side dish.


Ingredients

2 tablespoons sour cream

2 tablespoons mayonnaise

2 tablespoons cotija cheese

1 lime (zest and juice)

1/2 teaspoon elote seasoning or chili powder

1 clove garlic (minced)

6 mini cucumbers (sliced thin)

1 cup frozen corn (thawed)

1/4 cup cilantro (minced)

2 tablespoons minced red onion

Sea salt to taste


Instructions

1. In a medium bowl mix sour cream, mayonnaise, cotija cheese, lime zest and juice, elote seasoning, and garlic until smooth.

2. Add sliced cucumbers, thawed corn, cilantro, and red onion.

3. Mix gently until well combined.

4. Season with sea salt to taste.

5. Chill before serving and enjoy.

Notes

Slice cucumbers evenly for best texture.
