Description

A crispy, cheesy Mexican Pizza layered with seasoned beef, beans, and enchilada sauce for the ultimate Taco Bell–inspired meal.


Ingredients

Scale

1 lb lean ground beef

1 packet (1 oz) taco seasoning

1/2 cup water

6 medium flour tortillas

1 can (16 oz) refried beans

1 can (10 oz) red enchilada sauce

1 cup shredded cheddar cheese

1 cup shredded pepper-jack cheese

1 Roma tomato, diced

1 green onion, diced

1 small can sliced black olives


Instructions

1. Preheat oven to 375°F. Spray baking sheets and bake tortillas until golden and crispy.

2. Cook ground beef in skillet until browned; drain excess grease.

3. Add taco seasoning and water; simmer 10 minutes. Set aside.

4. Warm refried beans in microwave; spread on one tortilla.

5. Top with beef, then another tortilla to stack.

6. Spread enchilada sauce and top with cheeses, tomato, onion, and olives.

7. Repeat with remaining tortillas.

8. Bake 5 minutes until cheese is melted; cool slightly before serving.

Notes

For extra crunch, use corn tortillas or fry them lightly before baking. Add jalapeños for extra heat.
