Description

Old-Fashioned Rhubarb Pie is a classic homemade fruit pie made with fresh rhubarb, sugar, and a flaky scratch crust. Perfect spring dessert.


Ingredients

Scale

1 recipe homemade pie crust (2 crusts)

6 cups chopped rhubarb

1 cup + 1 Tablespoon granulated sugar, divided

1/4 cup tapioca flour

1 teaspoon orange zest

1 1/2 tablespoons butter

Optional: 1/4 teaspoon cinnamon, nutmeg, or cardamom


Instructions

1. Preheat oven to 400 degrees F.

2. Combine sugar, tapioca flour, and zest. Toss with rhubarb.

3. Place bottom crust in pie plate and sprinkle with coarse sugar.

4. Add filling and dot with butter.

5. Top with second crust, seal edges, cut vents.

6. Bake 1 hour, tent with foil if needed.

7. Cool at least 4 hours before slicing.

Notes

Refrigerate up to 4 days.

Tent crust to prevent over-browning.

Allow full cooling for best slice texture.
