Oven Baked Taquitos

Description

Crispy oven baked taquitos filled with seasoned chicken and onion. A simple and flavorful homemade Mexican food favorite.


Ingredients

Scale

12 corn tortillas

2 chicken breasts, cooked (or 1 large can shredded chicken)

1 small onion

2 tablespoons canola oil

1 cup shredded cheese (optional)

2 tablespoons homemade taco seasoning


Instructions

1. Preheat oven to 425 degrees.

2. Chop the onion into very small bits.

3. Place onion, taco seasoning, canola oil, and chicken in a small pan.

4. Shred chicken while cooking over medium heat until onions are tender and translucent.

5. Remove from heat and allow mixture to cool slightly.

6. Place about 3 tablespoons of meat across the center of each tortilla.

7. Fold tortilla over meat and roll tightly.

8. Repeat with remaining tortillas.

9. Place seam-side down on a baking sheet.

10. Bake for 12 to 15 minutes until lightly browned.

11. Remove and allow to cool slightly before serving.

Notes

Warm tortillas before rolling to prevent cracking.

Store leftovers in the refrigerator and reheat in the oven for best texture.
