  • Author: William Cantor

Description

Parmesan Crusted Steak smoked low and slow, then finished under the broiler with a golden garlic Parmesan crust for a bold Special Occasion Dinner.

Ingredients

Scale

2 New York Strip Steaks (1.5 inches thick)

2 teaspoons Hey Grill Hey Beef Rub

3 Tablespoons mayonnaise

1/4 cup Parmesan cheese grated

2 cloves garlic minced

1 teaspoon dried basil

1/2 teaspoon cracked black pepper

Instructions

1. Preheat smoker to 225 degrees F.

2. Season steaks on all sides with beef rub or salt and pepper.

3. Combine mayo, Parmesan, garlic, basil, and black pepper in a bowl.

4. Place steaks on smoker and cook until 10 degrees below target temperature.

5. Preheat oven to High Broil and heat cast iron skillet for 8-10 minutes.

6. Top each steak with Parmesan mixture.

7. Place steaks on hot skillet and broil 2-3 minutes until bubbly and browned.

8. Rest steaks 5-10 minutes before serving.

Notes

Use a meat thermometer for accuracy.

Pull steaks 10 degrees below desired doneness before broiling.

Resting allows carryover cooking to finish the steak.
