Description

Peach Bruschetta with whipped ricotta, fresh basil, and juicy peaches on crispy garlic baguette slices.


Ingredients

Scale

1 baguette, thinly sliced

¼ cup unsalted butter

4 garlic cloves, minced

Salt and pepper to taste

1 pint cherry or grape tomatoes, chopped

3 ripe peaches, diced

2 tablespoons extra-virgin olive oil

Juice of ½ lemon

1 handful fresh basil, thinly sliced

1 cup ricotta cheese

Balsamic glaze for drizzling (optional)


Instructions

1. Preheat oven to 400°F (200°C).

2. Mix butter with half the minced garlic and salt.

3. Spread on baguette slices and bake 10–12 minutes until golden.

4. Combine peaches, tomatoes, remaining garlic, olive oil, lemon juice, salt and pepper.

5. Let mixture sit for flavors to combine.

6. Whip ricotta until smooth and fluffy.

7. Spread ricotta on toasted bread.

8. Top with peach mixture.

9. Sprinkle basil and drizzle balsamic glaze if desired.

10. Serve immediately.

Notes

Assemble just before serving to keep bread crisp.

Use ripe but firm peaches for best texture.
