Pineapple Salsa

Description

This pineapple salsa is a fresh, dairy free appetizer made with juicy pineapple, crisp bell pepper, jalapeño, and lime juice. Perfect for parties and summer gatherings.


Ingredients

Scale

3 cups pineapple – from 1 pineapple to make the bowl, diced

2 cups diced bell pepper – about 1 large bell pepper – half orange and half red

1/4 cup red onion – small dice

1/2 jalapeño – seeds removed, small dice

2 tbsp chopped cilantro

3 tbsp lime juice

1/2 tsp salt


Instructions

1. Cut the pineapple lengthwise in half slightly above the crown.

2. Carve around the inside close to the skin and cut a grid into the flesh without piercing the bottom.

3. Scoop out the pineapple flesh and scrape the sides to form a bowl.

4. Dice 3 cups of pineapple and reserve the rest for another use.

5. Combine diced pineapple, bell pepper, red onion, jalapeño, cilantro, lime juice, and salt.

6. Stir well, place in the pineapple bowl, and serve with tortilla chips.

Notes

Adjust jalapeño for more or less heat.

Best served fresh the same day.

Store leftovers in an airtight container in the refrigerator up to 2 days.
