Pineapple Whip

Description

Pineapple Whip is a creamy 3-ingredient frozen fruit dessert made with pineapple and coconut milk. This healthy dessert tastes like soft serve and comes together quickly.


Ingredients

Scale

1 pineapple, peeled, cored, cut into chunks and frozen (6.57 cups)

½ cup coconut milk (more as needed)

13 tablespoons honey, maple syrup or agave (to taste)


Instructions

1. Peel, core and cut one fresh ripe pineapple into chunks. Spread chunks on a lined baking sheet and freeze until solid for at least 24 hours.

2. Place frozen pineapple chunks in a food processor together with ½ cup of coconut milk. Process until smooth and creamy. Scrape down the sides and add more milk as needed.

3. Taste and add sweetener if needed. Process again to incorporate.

4. Transfer to a piping bag with a star tip and pipe into serving bowls in a swirling motion.

Notes

Use very ripe pineapple for natural sweetness.

Freeze pineapple fully for best soft serve texture.

Let frozen leftovers sit 10–15 minutes before serving.
