Description
Soft, chewy, and filled with creamy white chocolate chips, these pumpkin cookies are the perfect fall dessert for Thanksgiving or any cozy night in.
Ingredients
½ cup unsalted butter (softened)
½ cup packed light brown sugar
½ cup granulated sugar
6 tbsp pumpkin puree (¼ cup + 2 tbsp)
1 egg yolk
1.5 cups all-purpose flour (180 g)
½ tsp cinnamon or pumpkin pie spice
1 tsp vanilla extract
½ tsp baking soda
½ tsp baking powder
½ tsp salt
1 cup white chocolate chips
Instructions
1. Wrap the pumpkin puree in paper towels or a tea towel to remove excess liquid.
2. Cream butter, brown sugar, and granulated sugar for 2–3 minutes until combined.
3. Add vanilla extract, pumpkin puree, and egg yolk; mix well.
4. Whisk together flour, baking soda, baking powder, salt, and cinnamon. Add to the wet ingredients and mix until just combined.
5. Fold in white chocolate chips.
6. Chill dough for 30 minutes.
7. Preheat oven to 350°F. Scoop 2 tbsp dough balls onto a parchment-lined baking sheet.
8. Bake 9–12 minutes until edges are golden. Tap pan after baking to flatten slightly.
9. Cool on tray for 5–10 minutes, then transfer to a rack.
Notes
To prevent cakey cookies, always blot the pumpkin puree.
Add a pinch of sea salt on top before baking for extra flavor.
