Description

Authentic Restaurant Style Mexican Rice made with toasted long grain rice, tomato sauce, garlic, cumin, and fresh cilantro. The perfect easy side dish for tacos and Mexican pairing meals.


Ingredients

2 cups long grain rice

1/4 cup oil

8 oz tomato sauce

1/2 cup cilantro, chopped

3 teaspoons salt

4 garlic cloves, minced

4 cups chicken broth

1/2 teaspoon cumin

1/4 teaspoon ground black pepper


Instructions

1. Heat oil in a large frying pan over medium-high heat.

2. Add rice and cook until golden brown.

3. Add chicken broth, tomato sauce, salt, garlic, cumin, and black pepper.

4. Stir well and cover with lid.

5. Reduce heat to medium-low and simmer 35-40 minutes until liquid absorbs.

6. Fluff rice, stir in cilantro, and serve. Sprinkle Cotija cheese on top if desired.

Notes

Use long grain rice for best texture.

Do not skip toasting step.

Let rice rest 5 minutes before fluffing.
