Description

Rhubarb Freezer Jam is a sweet and tangy easy preserve made with fresh rhubarb, sugar, and strawberry gelatin. Perfect freezer preserves recipe for beginners.


Ingredients

Scale

5 cups fresh rhubarb, cleaned and cut into small pieces

3 cups sugar

2 (3 oz) boxes strawberry jello


Instructions

1. Clean and cut rhubarb and place in a large bowl

2. Sprinkle with sugar and mix well

3. Place in refrigerator to set overnight

4. Remove and add rhubarb to a large pot on the stove

5. Sprinkle with strawberry jello and stir until mixed

6. Bring mixture to a boil and cook for 10-12 minutes

7. Cool completely

8. If you have large chunks of rhubarb still, use a potato masher to gently break them down

9. Spoon jam into freezer containers

10. Freeze up to 1 year

11. Thaw in the fridge, store in fridge up to 6 weeks

Notes

Store in freezer-safe containers.

Leave space at the top for expansion during freezing.

Label containers with date for best freshness.
